Dickens of a S'mores Bars

Ingredients
  • 1 cup LC-Granola and Cookie Bites mix (or ground nuts)
  • 2 tablespoons water (omit if using nuts)
  • 2 tablespoons butter, softened
  • 1 large box sugar-free chocolate pudding mix
  • 1-3/4 cups coconut milk
  • ½ cup heavy whipping cream
  • LC-Marshmallow Fluff mix (or sweetened, whipped cream)
Instructions
  1. For bottom layer: mix LC-Granola and Cookie Bites mix with water and butter. Spread into the bottom of an 8x8 pan. Bake at 350 degrees for 30 minutes. Cool in the fridge.
  2. For the pudding layer: mix together the pudding mix, coconut milk and cream until thickened. Measure out 3 cups and spread over bottom layer. Refrigerate for an hour, until firm. Cut into squares.
  3. For topping: Prepare fluff as directed on the package. Allow fluff to solidify slightly in the fridge, about 20-30 minutes.
  4. Spoon fluff onto cut bars. Serve immediately. Refrigerate leftovers.
