Instructions

  1. Spread the jam in the bottom of a 6-ounce custard dish.
  2. In a small bowl, mix the remaining ingredients with a fork until well blended.
  3. Spoon the batter over the jam.
  4. Microwave on high 1 minute or until cake is done.
  5. Let cool a few minutes and then invert onto a small plate.
  6. Sprinkle with a little LC-Confectionery Powder if you like.
  7. Serve warm.
