Breakfast Bake / Pancake Dessert

Ingredients

Scale
  • 1 cup LC-Pancake Mix
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup Atkins vanilla shake drink
  • 8 to 10 drops LC-Natural Sweet Drops
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 stick butter, chilled
  • 1/2 cup crushed pecans
  • 1/2 cup LC-Natural Sweet Brown
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon sugar free vanilla syrup

Instructions

  1. Prepare pancake mix as directed (doubled) on package.
  2. Pour into greased glass bread pan and cook in microwave for 4 minutes.
  3. Cool on rack.
  4. When cool, cut into slices and overlap the slices in an 8×12 baking dish.
  5. Mix the eggs, cream, vanilla shake drink, drops, cinnamon and nutmeg together with a mixer. Set aside.
  6. Cut the remaining ingredients into the chilled butter to make the Praline Topping.
  7. Pour the liquid over the pancake slices and then sprinkle the Praline Topping evenly over the whole thing.
  8. Bake at 350 degrees for 30 minutes.
  9. Can be served with sugar free maple syrup and whipped cream.
