On the sweet side - Try adding fresh or dehydrated fruit, nuts and unsweetened coconut to the batter. Or how about some Dutch cocoa and cinnamon? Or maybe some canned pumpkin? You can add reconstituted barberries to the batter for "raisin bread". Any of these variations would make an awesome French Toast! Or how about a low carb bread pudding?
On the savory side - Before baking try spreading melted butter on top of the bread dough and then sprinkling with one or some of these: paprika, Parmesan cheese, garlic powder, minced onion, sage, rosemary or dried tarragon.
